Freshly harvested cherries were floated, depulped, and fermented in open tanks for 36 hours. After a second float and thorough washing with clean water, the coffee was patio-dried for 12 days, then rested for 10 weeks before hulling.
Traceable to a single farm of 28ha, this single-origin coffee produced by Sabio is a distinctive, fruity coffee with notes of Blueberries, papaya and milk. This carbon-neutral, high-quality single showcases the best of both the producer and our head roaster's signature style.

Flavour Notes: Sweet spice and stewed apples upfront, with golden raisin and maple syrup. A full, sticky body and mild acidity carry through the finish.
